Banana Oat Chocolate Chip Cookies

Wheat free if you use GF oats; vegetarian; non-dairy if you use vegan chocolate chips, unsaturated fat; low cholesterol

Ingredients:

  • 1 cup oat flour (1 cup ground oats)
  • ¾ cup old-fashioned oats
  • ½ tsp baking powder
  • ⅓ tsp baking soda
  • ½ tsp salt
  • ½ cup raw sugar
  • ⅓ cup canola oil
  • ⅓ cup plain soy milk
  • ½ tsp vanilla extract
  • ½ ripe banana, cut into small pieces
  • ¼ cup chopped walnuts or your choice of nuts
  • ⅓ cup semisweet vegan chocolate chips

Directions:

  1. Preheat oven to 350-degrees.
  2. Line 2 cookie sheets with parchment paper.
  3. In a bowl whisk together the oat flour, oats, baking powder, baking soda and salt.
  4. In a separate bowl, cream the sugar, oil and banana.
  5. Add in the milk and vanilla.
  6. Mix in dry ingredients and then fold in chocolate chips and nuts.
  7. Drop by spoonful onto cookie sheet.
  8. Bake 20-25 minutes until golden brown.
  9. Turn baking sheet about half-way through the baking time.
  10. Let cool on wire rack.
