Chicken Lettuce Wraps  with Thai Cucumber & Carrot Salad

8 servings

Chicken Ingredients:

  • 1 tbl. Sesame Oil
  • 1 lb Chicken Breast (diced)
  • 1/2 cup Chestnuts
  • 1/4 cup Sliced Green Onions
  • 1 tsp Minced Garlic
  • 3/4 cup Mushrooms (diced)
  • 1.5 tbl. Low Sodium Soy Sauce
  • 1 1/2 tbl. Light Brown Sugar
  • 1 tbl. Rice Wine Vinegar
  • 1/5 head of Iceberg Lettuce

Directions:

  1. Combine Soy Sauce, Brown Sugar, and Rice Vinegar to make sauce. Reserve to the side
  2. Sauté chicken and garlic in sesame oil for two minutes. Stir Frequently, ensuring not to burn the garlic
  3. Add remaining ingredients, including sauce,   and cook for additional two minutes.

Thai Cucumber and Carrot Salad

Ingredients:

  • Minced Garlic - 2 tsp
  • Fresh Lime Juice - 1 ½ Tbs                                             
  • Cucumbers finely sliced - 2 cup
  • Carrots - finely sliced - 1 ½ cup
  • Rice Wine Vinegar - 1/3 cup
  • Fresh Mint - 1 tsp
  • Minced Serrano Chili - ½ tsp
  • Sugar - 2 tsp

Directions:

  1. Combine all ingredients and reserve

Dipping Sauce

Ingredients:

  • Light Brown Sugar - 2 ½ Tbs                                 
  • Low Sodium Soy Sauce - 1 ½  Tbs                                 
  • Rice Wine Vinegar - 1 ½  Tbs
  • Water - ¼ cup
  • Siracha - ½ tsp
  • Hot Mustard - ½ tsp

Directions:

  1. Combine all ingredients and reserve
