Cloud Bread

Makes 6 servings

Ingredients:

  • 3 large eggs, divided
  • 1/8 tsp cream of tartar
  • 3 Tbl plain Greek yogurt (light)

Preheat oven to 300 degrees and line a sheet pan with parchment paper.

Beat egg whites and cream of tartar in a mixing bowl on high speed until stiff peaks form.

In a separate large bowl mix the egg yolks and Greek yogurt until smooth. Gently fold in the egg whites until just blended.

Divide mixture into 6 portions on the sheet pan and spread into a circle, about half-inch thickness.

Bake 30 minutes or until lightly browned. Transfer to a wire rack immediately and let cool completely before serving (about 1 hour). Can be stored in a sealed container.
