Lower Sodium Biscuits

modified from a NorthWest Kidney Centers recipe

Lower Sodium Biscuits

Makes 8 biscuits

Ingredients:

  • 2 Cups + 2 Tbl all purpose flour
  • ¾ tsp baking powder
  • ½ tsp cream of tartar
  • ¼ tsp baking soda or ½ tsp Ener-G baking soda substitute
  • 6 Tbl unsalted butter or shortening
  • ½ C milk (I used 2%)

Directions:

  1. Preheat oven to 450 degrees and line a cookie sheet with parchment paper.

  2. Sift the flour, baking powder, cream of tartar and baking soda into a medium bowl. Cut in the shortening or butter with 2 knives, a pastry blender, fork or your fingers until it resembles crumbs.

  3. Stir in milk until it just comes together and let rest for 5 minutes. Lightly dust a board or counter with flour and pour out mixture. Knead gently 10-15 times. Roll into ~ ½ inch thick rectangle or square and cut into 8 equal pieces. Remember to cut straight through, don’t twist the cutter or drag the knife through the dough as that will prevent them from rising evenly when baking.

  4. Place 2 inches apart on the baking sheet. Bake 10-12 minutes until golden brown
