Marinated Peanut Tempeh 

Yield 4

Ingredients

  • 8 ounces tempeh
  • 1 fresh chili, minced/crushed (or sub 1/4 tsp red pepper flake)
  • 2 Tbsp salted creamy nut butter
  • 2 Tbsp low sodium soy sauce
  • 1 entire lime juice
  • 3 Tbsp maple syrup

Directions

  1. Slice the tempeh in half lengthwise then cutting into small triangles. Set aside.
  2. Mix marinade by adding chili, peanut butter, soy sauce lime juice, and maple syrup. Whisk to combine. Taste and adjust flavor as needed.
  3. Add the sliced tempeh to the marinade and toss to coat. Then cover and refrigerate for at least 1 hour. Tempeh can be marinated for up to 2 days. While marinating, toss/stir occasionally to ensure even coating. If any marinade remains, drizzle over pieces for extra flavor.
  4. Once marinated, preheat oven to 375 degrees F (190 C) and line a baking sheet with parchment paper.
  5. Bake for 22-25 minutes or until caramelized and deep golden brown.
