Marinated Pork Skewers with Peach Salsa

Serves 6

Ingredients:

Pork Skewers:                                                            

  • Pork Loin, Boneless (trimmed of excess fat) - 1 ½ Pounds
  • Cumin -  2 Tablespoons
  • Chili Powder - 2 tablespoons
  • Salt Black pepper - pinch 

Peach Salsa:

  • Fresh or Frozen Peach Slices - 1 ½ cups
  • Fresh Tomatoes (diced) - ½ cup
  • Cilantro (chopped) - ¼ cup
  • Onions (diced) - ½ cup
  • Lime Juice - 2 Tablespoons
  • Crushed Red Pepper Flakes - 1 teaspoon
  • Extra Virgin Olive oil - 2 teaspoon

 

Directions:

  1. For the salsa, combine all the ingredients in a small bowl. Toss well, and let the salsa marinate for at least one hour, set aside.
  2. Trim pork into 1 ½ inch cubes. Season and toss with cumin, chili powder, and salt & pepper. Place port on skewers, (four each) .
  3. Grill or roast skewers at medium heat until fully cooked.
  4. Top pork skewers with peach salsa.
