Ingredients

  1. 1 cup Basmati rice, rinsed and soaked (~10min)
  2. 2 tablespoon olive oil
  3. 1 teaspoon cumin seed
  4. 2 small cinnamon stick (or one long piece)
  5. 2 bay leaves
  6. 2 green cardamom pods
  7. 2 black cardamom pods
  8. 6 whole cloves
  9. ½ medium onion, sliced
  10. ½ cup of the following: green beans (frozen or fresh), frozen peas, peeled/cut carrots
  11. 2 cups of water
  12. ½ teaspoon salt and pepper

Directions

  • Rinse rice in colander. Let soak for 10min + in water. While rice soaks, heat oil in sauce pan.
  • Once oil in pan heats up, add the spices: cumin seed, cinnamon stick and cardamom pods, bay leaves and cloves.  Continue brown seasonings in oil and stir frequently for ~ 5 minutes.
  • Add onion and continue to sauté until onion starts to brown.
  • Add vegetables until they become soft ~5-7 minutes.
  • Add water, salt/pepper and bring water to boil.
  • Add rice. Turn heat to medium low and place lid on pan. Cook for ~15 minutes.
